With three rosettes Judges is one of the highest rated restaurants in the country. Built in 1881 as a rural retreat for a prominent family in the north east, the house was later used as a residence for circuit judges, hence its current name. The 42 acres of landscaped grounds provide a truly peaceful environment, and it's easy to imagine those judges were sorry to see it become a sumptuous country-house hotel. Their loss is our gain. Traditionally and elegantly furnished, the house is the setting for some bold and imaginative cooking in the conservatory restaurant. The individually-priced carte (with supplements) is based around classical French cooking but demonstrates an eye for innovation and presentation. Mosaic of guinea fowl and foie gras comes with pickled mouli and figs in a starter, while main-course fillet of locally reared beef is partnered with ox cheek, wild mushroom cannelloni and bordelaise sauce. Finish with lemongrass and cardamom soup with plum compôte and chilli sorbet. The genuinely friendly and professional service helps make for a memorable experience all round.
